• 1 cup (227 g) butter
  • ½ cup (100 g) granulated sugar
  • salt
  • 1 ½ teaspoons vanilla
  • 1 egg
  • 1 c almond meal
  • 2 cups (284 g) all-purpose flour
  • 0.25 t raspberry flame jam per cookie

Cream together butter and sugar. Add the egg and beat till fluffy. Mix in the salt and vanilla, then the almond meal, and finally the flour.

Roll 1 tablespoon of dough at a time into balls and press a depression into them with the back of a ¼ teaspoon meauring spoon(or just poke with your thumb or finger) and fill with the jam.

Bake at 175⁰ C till just starting to turn golden brown (7 minutes?)

They are good with any jam, but Keldor is especially fond of them with the Raspberry Flame jam one can buy locally as the bite from the chili is nicly complimented by the slightly sweet buttery goodness of the cookie.

The dough is also also good baked plain, without jam,, like a Danish butter cookie.
