I tend to do a variety of quick breads, normally making up the recipe as I go, so why not keep a record of what I did, and how they went?
Oat bread
- 2026-02-08 a small quick bread, baked in the toaster oven At 175 C in a buttered Pyrex bowl for 20 min
- 1 c oat flour
- 0.5 c milk
- 25 g butter
- 1 egg Cut butter into the flour till completely incorporated. Stir in milk and egg. Bake. After putting it into the oven it occurred to me that it might have been nice to add a little baking powder. However, it was moist and tasty still warm with a little extra butter, and I think I will enjoy it cold tomorrow as well. I remembered to take a photo before baking:
