I often make variants of this.

I made one using:

  • 1 spegetti squash
  • 2 zucchini
  • 1 bag of spinach
  • 2 bags mixed salad greens
  • 3 cloves garlic
  • 1 tablespoon mushroom powder
  • 0.25 c almond meal
  • butter
  • feta cheese
  1. Cut the spegetti squash in half, scoop out the seeds (wash and roast them as a snack to eat while the squash cooks), and steam it in a steamer over water to which the garlic cloves and mushroom powder has been added
  2. Chop the zucchini into bite-sized bits. When the squash is soft take it out of the steamer and add the zucchini.
  3. While the zucchini cooks scoop the squash out of its shell and into a large bowl, and stir in a little butter
  4. When the zucchini is soft add it to the squash, and add the greens to the boiling garlic mushroom water and cover till it wilts. Then use an immersion blender to make a sauce of the garlic mushroom broth and greens, and add a quarter cup of almond meal, a bit more butter, and any spices that sound good (today I added garlic and onion powder, pepper, coriander powder, and curry powder)
  5. Stir the sauce and the feta into the saqash and zucchini. I was very happy with how this came out.
